New England Boiled Dinner

Ingredients:

2 pounds corned beef, 1.5" in thickness

4 cups cold water

1 medium onion, quartered

4 garlic cloves, crushed

Pickling Spices Seasoning (your own/ included)

6 carrots, peeled, cut to 2.5" length

4 purple top turnips, quartered / 15-20 red radishes, whole, (you can sub with potatoes if you prefer)

1 cabbage, cut into 8 wedges

Directions:

1. Rinse corned beef, add it along with the onion, garlic, pickling spices, and 4 cups cold water in the pressure cooker.

2. Cook on manual for 70 mins, 15 mins natural release.

3. Remove corned beef. Leave 2 cups of liquid remaining.

4. Add potatoes, carrots, and cabbage in the pressure cooker. Cook for 2-3 mins quick release.
