Sausage & Tortellini Soup

Comfort in a bowl is what I call this recipe. All the kids are happy when this is for dinner. I think most parents can agree it’s tough to make them all happy with the same meal. My oldest son equates it to chop suey rather than soup (the kids like to let the broth soak into the tortellini). My niece says she dislikes soup of all kinds, except this one.

1 lb                       Ground Sausage (I prefer sweet Italian)

1 cup                 Spinach

3 cups                Diced Potatoes (4 potatoes)

1 cup                   Diced Onions (1 onion)

2 Cups Diced Carrots (3 carrots)

4 cups                Chicken Bone Broth               

1 lb       Tortellini

 

This is a one-pot meal, yay for less clean-up!!

Brown the sausage.

In the same pot add the onions, celery, & carrots and cook until the onions are translucent.

Add bone broth and potatoes to the pot. Make sure to scrape the bottom to free all the tasty goodness.

Let simmer for about 10 minutes or until the potatoes are tender to your liking.

Now it’s time for the tortellini, cook until tender.

Stir in the spinach just before serving.
