Cuban Mojo Pork
Ingredients:
3 1/2 lb pork shoulder
3/4 Cup Orange juice
1 Tablespoon Orange zest
1/2 Cup Lime juice
3/4 Cup Oil
10 Garlic cloves
1 Cup Cilantro
1/4 Cup Mint leaves
1 Tablespoon Oregano
2 Teaspoons Cumin, ground
Directions:
Combine the cilantro, mint, garlic and orange juice in a food processor, pulse until finely chopped. Place contents into a container along with: avocado oil, lime juice, orange zest, oregano, and cumin.
Add pork shoulder, cover, and place in fridge overnight.
Pre heat oven to 425F
Cook on a wire rack placed over a cookie sheet (place parchment paper on cookie sheet for easy cleanup)
Cook for 30 mins and then flip roast over. Turn down heat to 375F and continue to cook for anther hour and half or until it reads 160F.
remove from rack & transfer to cutting board to rest. Then carve against the grain.
