Sausage, Spinach & Sweet Potato Soup

This soup is so amazing and flavorful my husband who refers to himself as the “condiment king” eats it as-is with nothing added. That’s when I knew we had a winner! This recipe is on regular rotation in the fall and winter months at our house.

1 lb                        Ground Sausage (I prefer sweet Italian)

2 cups                 Spinach

3 cups                 Diced Sweet Potatoes

1 cup                    Diced Onions

4 cups                 Chicken Bone Broth                    

1 can                    Coconut Milk

4 cloves              Minced Garlic   

 

This is a one-pot meal, yay for less clean-up!!

Brown the sausage.

Add the onions, sweet potato, garlic & broth. Scrape the bottom to free all the tasty goodness from it. Let simmer for about 20 minutes or until the sweet potatoes are tender to your liking.

Stir in coconut milk and spinach.
