Maple-Pecan Pork Chops
Anytime I add maple syrup to recipe it seems to be a winner in our house. Not sure if it’s New England in our veins or the fact that we don’t eat sweets very often, either way these chops turned out exceptional.
Ingredients:
4 Pork Chops (thick cut)
1 Cup Pecans
1/2 Cup Apple Cider (or Juice)
1/3 Cup Maple Syrup
2 Tablespoons Dijon Mustard
Pepper for seasoning
2 Tablespoons Oil (or butter)
Directions:
Heat a skillet on medium heat. Drizzle with oil (or butter if you use dairy).
Measure out a couple table spoons of maple syrup and mix with Dijon mustard. Season chops on both sides with pepper. Brush one side with maple-mustard mixture and place in pan. Brush the remaining side. Cook for 3 minutes per side - should have a nice golden brown color to them now.
Add apple cider (or juice) to skillet, cover and cook for 15-20 minutes (until internal temp is 145 F) on a low simmer.
Remove chops and set aside. Add pecans and remaining maple syrup to the skillet. Stir thoroughly for 1-2 minutes until syrup incorporates. To serve pour pecans and sauce over chops.
