Fall Fruit Bake
This dessert is the perfect example of how I like to cook. It takes a handful of ingredients that highlight the season and lets them shine without a lot of fuss. To dress it up for a special occasion spiral the fruit slices around the skillet. No time for that then throw it all in a casserole dish willy-nilly and bake. Both are just as tasty ;)
Ingredients:
1 Tablespoon oil
3 or 4 whole Fall Fruit (apples, pears, peaches)
1 Cup Cranberries
Cinnamon to sprinkle
Honey (optional)
Vanilla Ice Cream/ Yogurt (optional)
Directions
Oil your cast iron skillet and preheat your oven to 350.
(you can also use a glass baking dish if you don’t have cast iron)
Core and slice your fruit. try to keep them about the same thickness.
Arrange in skillet/ baking dish. pour cranberries on top & sprinkle everything with cinnamon.
Bake until fruit is tender and cranberries begin to burst.
We serve this warm on top of ice cream or cold on top of yogurt, the kids love to drizzle with a little honey.
We have experimented with several combinations that we love: peaches with cranberries or apples & pears with cranberries. Let us know what combinations you love!!
Bonus frugal tip: If you aren’t growing cranberries yet (they are so easy) buy cranberries on sale after Thanksgiving and toss in the freezer as is, no vacuum sealing needed.
